Coeliac New Zealand has developed an online training programme covering all aspects of what is involved in serving safe gluten-free (GF) food from choosing ingredients, storage, food preparation, and cooking right through to serving customers and labelling your menu.
KEY LEARNING OUTCOMES
- Understanding coeliac disease and the gluten-free diet
- Gluten-free food safety and laws
- Choosing and storing the right ingredients
- How to prevent cross-contamination and implement and monitor gluten-free food processes
- Communicating with staff and customers
The online training will take around 60–90 minutes to complete and is a combination of written information, video clips, and multiple-choice questions with a 15-question multiple-choice test at the end. You will receive an individualised Gluten-Free Food Safety Certificate upon passing the module which can be added to your CV.
