New Compendium of Microbiological Criteria for food released

Food Standards Australia New Zealand (FSANZ) have published an updated version (September 2018) of their Compendium of Microbiological Criteria for Food.

This provides an excellent summary of typical microbiological limits for ready to eat foods, together with information on food pathogens, indicator organisms, and environmental surveillance programmes.
